Brunch – FRIED EGG FLATBREAD WITH NDUJA AND MUSTARD FROM BON APPÉTIT
This Fried egg flatbread is the perfect Sunday brunch meal. It’s easy to share with multiple guests and the kids will love it!
INGREDIENTS – 4 SERVINGS
- 1 bunch scallions, trimmed
- 3 Tbsp. olive oil, divided, plus 6 Tbsp., divided, for eggs
- 1 lb. prepared pizza dough, room temperature, halved
- 3 cups baby mustard greens or frisée
- 1 Tbsp. fresh lemon juice
- Kosher salt, freshly ground black pepper
- 2 oz. nduja or 4 oz. thinly sliced spicy capocollo, divided

- 2 oz. Pecorino Toscano or other sharp cheese, shaved, divided
Lunch – LEMON-HERB COD WITH CRISPY GARLIC POTATOES BY ONE PAN WONDERS
Enjoy your afternoon lunch with this recipe from One Pan Wonders. A zesty lemon-herb cod, perfectly paired with crispy potatoes and an arugula salad.
INGREDIENTS – 4 SERVINGS
- 1½ pounds russet potatoes, unpeeled, sliced into ¼-inch thick rounds
- 2 tablespoons unsalted butter, melted, plus 3 tablespoons cut into ¼-inch pieces
- 3 garlic cloves, minced
- 4 sprigs fresh thyme, plus 1 teaspoon minced
- Salt and pepper
- 4 (6- to 8-ounce) skinless cod fillets, 1- to 1½-inches thick
- 1 lemon, thinly sliced
Dinner – BUTTERNUT SQUASH GNOCCHI BY KITCHENAID
